Vineyard: St. Nicholas is an east-facing zone at 550 – 600 metres above sea level, an alluvial cone made of limestone rubble, mainly angular dolomite rocks, fine soil made of reddish clay, very deep, loose, well-ventilated and water-permeable, neutral to basic.
Pairs well with: Spicy fish soup, herb risotto, fried fish but also grilled poultry. Put it aside for a few years so that it can fully develop its taste potential.
